Recipe: Simple Black Beans, Brown Rice, Greens, Avocado and Red Salsa
1 can organic black beans2 cups chopped mixed greens
1 cup brown rice (before cooking)
1 jar red salsa
6 garlic cloves
1/4-1/2 cup red wine
1 tablespoon live oil
1/4 cup pumpkin seeds
Seasonings: garlic and onion powder, sea salt,
cilantro, italian herbs, lemon pepper
1 cup brown rice (pearl) cooked in 2 1/4 cups of water.
Boiled 40-50 minutes. Sprinkled with sea salt. Heat up
black beans with all herbs added in with tablespoon of
olive oil, and red wine.
Finely chop mixed greens and take handfull and cook in
with black beans and spash more wine.
Take avocado and squeeze out half and smash. Take 1/4-1/2
cups of raw pumpkins seeds and toast until popping and
lightly brown in pan. 2-4 minutes.
Serve brown rice on half plate with the other half the
black beans. Sprinkle raw, chopped mixed greens over top
with avocado and pumpkin seeds.
