“Quick” Boiled Broccoli and Yam with “Broccoli Broth” Drink!

9 oz broccoli florets (2-3 cups)1 medium-large sweet potato or yam
1 quart vegetable broth
1-1 1/2 cups water

Onion, ginger and garlic powders, lemon pepper and Italian herbs.

Cut in half some of the broccoli florets to make them bite size and spread evenly throughout a 10-12 inch pan. Pour in 1 – 1 1/2 cups water to “half cover” the broccoli florets. Sprinkle all the above seasonings evenly over the florets. Bring to boil and simmer for 2-4 minutes until bright green but still firm and shut off and let sit for a minute. Poor off the water/broth and eat or put broccoli into containers. Drink the broth while hot.

The yam (or sweet potato) is cut up into 1/2 inch thick pieces. Then cut in half once more. Boil in water or left-over vegetable broth for 10-15 minutes with any combination of seasonings above. Serve when pieces of yam “fall” off a fork.
