“Two Dollar” Black Beans and Rice

INGREDIENTS
1 can Aunt Penney’s organic black beans
1/2 cup each of brown rice and white rice1/3 finally chopped red onion
1/3 finally chopped red bell pepper
1/4 cup of red wine
2 tablespoons extra virgin olive oil
1/3 cup medium red salsa
1/3 cup medium green salsa
1/2 – 1 cup left over guacamole

SEASONINGS
Dried chopped garlic, lemon pepper, Italian herbs, red pepper (cayenne) powder, Louisiana Gem garlic hot sauce, coarse sea salt.

DIRECTIONS
Cook brown and white rice with 2 1/4 cups of water  to 1 cup of rice (1/2 cup each). Takes about 50 minutes. Season with sea salt and dried chopped garlic.

Pour olive oil in deep sauce pan and add onions and red pepper and simmer. After 1-2 minutes add in black beans with all herbs and seasonings and pour in  splashes of red wine and stir for 2-3 minutes until hot.

Put rice on one half of plate and beans on the other. Take chopped cilantro and put it on the beans and put the salsa (green and red) on the rice. Take left-over guacamole and put in middle of salsas.

Ready to serve
