Father’s Day Fried Rice & Veggie Burger Wraps


Fathers Day Fried Rice Wraps
Ingredients:

8-10 Rice Paper Spring Roll Wrapper1 veggie burger
1 cup brown rice (before cooking)
1 finely chopped yellow bell pepper
1 small diced white onion
1 cup of corn sliced off the cob
1 cup shredded carrots
1 medium avocado mashed
2 small limes – juice from
2 tablespoons of olive oil

Seasonings:
Onion flakes, granulated garlic, parsley, sea salt, lemon pepper, hoisin sauce

Directions:
Cook brown rice. At same time grill onions, bell
peppers and carrots with small amounts of olive oil with all the seasonings. Then add crumbled veggie burger and brown whole mixture and stir.

When rice is done mix in grilled vegetables and veggie burger and stir with additional seasonings to taste.

Mash avocado and mix with juice of 2 limes.

Making Wraps- Soak wraps in hot water 5-10 seconds a side. Put flat on cutting board. Apply some Hoisin sauce, add fried rice, shredded carrots and avocado and wrap.
